The garlic

One variety, grown properly.

We grow Red Russian — a hardneck rocambole prized for its rich, robust flavour and beautiful purple-striped wrappers. Every seed bulb is sorted by hand, cured in the barn, and weighed to the gram, ready for your fall planting.

Garlic bulbils

The smallest seed, the longest game.

Bulbils are the small aerial bulblets that form at the top of a hardneck garlic scape. Red Russian produces a mix of medium and smaller bulbils. Plant them closely and give them a season or two to develop into rounds, then full, multi-cloved bulbs. It’s a slower way to build your own garlic stock, but an economical way to multiply planting material.

Garlic scapes

Picked in early summer, gone by July.

Each spring we snap the curling flower stalks off the plants so the bulb puts its energy underground. Those scapes are the sweet, green-garlic vegetable of the season — great grilled, pickled, or blended into pesto. Available fresh while the patch lasts.

The ethos
"You can't rush a bulb. You can only tend it, and trust the season."
